This rosemary garlic slow cooker roast beef is comfort food at it’s finest. Although it comes together fairly quickly and there is little hands on time, the slow roasting yields a super tender, fall off the bone, flavor packed roast.

I learned from my good friend Yuli that searing the meat before roasting it gives the meat an amazing texture and also seals in all the flavor and spices of the seasoning. This extra step only takes 10 minutes or so but it will really be worth the effort in the end. Cooking the garlic rosemary slow cooker roast beef in red wine and beef broth helps to deepen and intensify the flavor and keep it really juicy. Make it on a cold, rainy winter day for the ultimate feel good meal or dress it up and serve it at a dinner party with this delicious Red Wine Cream Sauce and some crusty homemade artisan bread.

Ingredients for Rosemary Garlic Slow Cooker Roast Beef:

5 lb. chuck roast
2 tblsp. montreal steak seasoning, (THIS is the one I use)
5-6 sprigs rosemary
4 cloves garlic, minced
6 tblsp. butter, sliced
1 cup beef broth
1/2 cup red wine

Directions for Rosemary Garlic Slow Cooker Roast Beef:

Using paper towels, pat dry the roast on all sides. Season with montreal steak seasoning all over. (I love using the grill mates montreal steak seasoning that I get from Costco. It’s perfect on chicken, pork, and all beef, including these rib eye kabobs!)

In a large cast iron or stainless steel skillet over high heat, heat 2 tablespoons avocado oil (or some other oil with a low smoke point).
When oil is hot, sear the roast on all sides, about 4 minutes a side until browned to seal in the flavor from the seasoning and give it an amazing texture at the end.

Place the roast inside slow cooker and top off with slices of butter, minced garlic, and rosemary.

Add in the beef broth and red wine to cover the bottom of slow cooker.

Cook on low 8 hours until meat is fork tender.

My favorite way to serve this is with some mashed potatoes and this amazing Red Wine Cream Sauce . Sooooooo good!!
