Hey guys, Happy November!! Let’s talk Thanksgiving and secrets to a no-fail, juicy, flavorful turkey every time. No Thanksgiving is complete without turkey. However, turkey can be an intimidating dish for a lot of people and I don’t blame them! I will admit, the first time I made turkey, I had no idea what I was doing. Lucky for me, I had my amazing mom coach me through the whole process and since then, I’ve been making turkey every year for the past 9 years. I’ve learned that there are 3 key secrets to making a no-fail, juicy, flavorful turkey:

  1. Brine (gives your turkey incredible flavor and moisture)
  2. Oven Bag (ensures your turkey doesn’t dry out while roasting by locking in all the moisture)
  3. Don’t overcook it (possibly the most important step to a juicy turkey!)

If you can stick a turkey in a big bag, and then later in a smaller bag, there’s really nothing difficult or complicated about this method that will yield juicy, flavorful meat every time and will have your guests raving.

Ingredients For No-Fail, Juicy, Flavorful Turkey:

12+ lb. turkey, completely defrosted
1/2 cup salt
2 tablespoons peppercorns
6 bay leafs, crushed
1 lemon, squeezed
8 quarts warm water
4 tablespoons mayo
pepper, to taste
1 turkey bag
Rice Stuffing:
2 cups rice, cooked
3 tablespoons mayo
3 tablespoons soy sauce

Directions For No-Fail, Juicy, Flavorful Turkey:

Start by making your brine mixture: mix 8 quarts warm water with salt, peppercorns, and bay leaf. Allow to cool completely. Once brine has cooled, squeeze in a whole lemon.

While brine is cooling, wash your turkey and remove all giblets and neck from the cavity.
Next, line a very deep bowl (or bucket) with a clean garbage bag for easier clean up. Place your turkey inside the bag and cover with cooled brine.

Tie garbage bag and squeeze out all the extra air. Refrigerate for 24-48 hours.

Remove turkey from brine, rinse and pat dry with paper towels.
Cover with 4 tablespoons mayo and some black pepper. Optional: sprinkle with other desired spices, seasoning such as garlic salt. It doesn’t need a lot because the turkey has already been brined so be careful not to over season! Place turkey inside turkey bag and place in roasting pan.

Stuff with optional rice stuffing or leave it unstuffed. Then tie the turkey bag.

Roast in 350° oven for 2 hours for a 12 lb. turkey (will be longer the bigger your turkey is). Make sure you place your turkey low enough in the oven so it doesn’t touch the heating element and burst the bag.

Remove from oven and cut the bag in half. Move it to the sides of the turkey so all the turkey skin is exposed. Place back in oven for 30-40 minutes until skin is golden brown and thickest part of turkey registers 165°. If your turkey has a pop-up thermometer, don’t rely on this tool to tell you when it’s done or you will overcook the meat! Make sure you use an instant read thermometer to tell the temp.
Remove from oven and tent with foil. Allow to rest for 30 minutes before cutting into it.

No-fail, juicy, Flavorful Turkey Serve with cranberry sauce, a side of mashed potatoes and white wine mushroom gravy. Mmmmm! The only thing missing from this Thanksgiving feast is a slice of the creamiest Pumpkin Cheesecake.
