I am totally in love with this 20 Minute Sausage Penne Skillet right now. It’s everything I want in a weeknight dinner: quick, simple, bold flavors, and little cleanup. Even though it’s a pasta dish, it doesn’t use any heavy cream sauces so it still tastes light and refreshing. I almost always have the ingredients used on hand so it’s quick to throw together for lunch, a weeknight dinner, or when unexpected guests arrive.
Be sure not to sub the kalamata olives or the sun dried tomatoes because these are going to take your dish to the next level and really make the flavors stand out! I love keeping a jar of the olives and tomatoes in my fridge and adding them into ordinary recipes to make them extraordinary.

Ingredients for 20 Minute Sausage Penne Skillet:
1 lb Penne
1 lb Italian sausage
2 handfuls spinach
1 cup kalamata olives, sliced
1/3 cup sun dried tomatoes
1 clove garlic, pressed
3 tablespoons olive oil
Directions for 20 Minute Sausage Penne Skillet:
Start by bringing a big pot of salted water to a boil for the pasta.
Meanwhile, brown sausage in skillet until cooked through.
Once water has boiled, add the pasta and give it a good stir so it doesn’t stick together. Start a timer for 10 minutes.
Once sausage has cooked through, add in spinach, olives, tomatoes, and garlic.
Cook for 1-2 minutes until spinach has wilted and remove from heat.
Drain the pasta and toss in 3 tablespoons olive oil. Add cooked penne into skillet and stir.
Serve with a sprinkle of grated parmesan or mozzarella cheese and some fresh, homemade Artisan Bread.
