White Chicken Chili

This 4 Ingredient White Chicken Chili is the perfect thing to serve on any night for many reasons:

  1. ItΒ requires only 10 minutes of hands on prep
  2. Uses staple pantry ingredients
  3. Only uses one pot for easy cleanup
  4. Very versatile
  5. Kid friendly and freezer friendly (for leftovers)
  6. No room for error and ALWAYS delicious

This recipe comes from Shauna Niequiest’s book, Bread and Wine (that I absolutely LOVE). I gave it a try because I have never tried a white chicken chili before and the recipe sounded easy enough. I loved that I already had everything on hand. And since falling in love with this 4 Ingredient White Chicken Chili, I make sure that I always have a couple cans of beans stocked in the pantry and chicken in the freezer. I can always find a can of salsa in the fridge without even trying.Β Rotisserie chicken can also be used for this recipe and will make it even easier.

4 Ingredient White Chicken Chili

To change up the flavor (and color) of this chili simply play around with the type of salsa you add. Green salsa will yield more of a chicken chili verde. I personally love it with a roasted tomato salsa but with every different can of salsa, there are new amazing flavors to be discovered. And finally, if you don’t have 6-8 mouths to feed, this 4 Ingredient White Chicken Chili is great for freezing. Simply seal it in a gallon sized freezer bag and reheat on the stove whenever the craving strikes.

Ingredients for 4 Ingredient White Chicken Chili:

3 chicken breast fillets (or boneless, skinless, chicken thighs), cut into bite size pieces
1 (16oz) can of salsa (any kind works!)
4 cans white beans
6 cups chicken broth

In a dutch oven, or any heavy bottomed pan, brown chicken pieces for about 5 minutes with salt and pepper.

Add salsa, beans (with their liquids), and chicken broth.

Bring to a boil, then reduce down to a simmer and allow to cook for at least 30 minutes, stirring occasionally. The longer it simmers, the better.
Serve with a little sour cream and Monterey jack cheese, if desired.

Ingredients
