How to Grow Your Own SCOBY At Home

First, lets start with the obvious- what the heck is a “SCOBY”?! A “SCOBY” is an acronym for Symbiotic Culture Of Bacteria and Yeast. Basically, it is the home for good bacteria and yeast that transform the sugars in sweet tea to fizzy, tangy, delicious, good for you Kombucha.  Sometimes you will hear people refer to it as the Kombucha “mother” or a Kombucha “mushroom”…know that they are referring to the SCOBY.

Growing a SCOBY is the first step in brewing Kombucha. If you have a friend or relative that make their own Kombucha, ask them for a SCOBY, and skip this step! Ingredients for how to grow your own SCOBY:

1 bottle RAW, original, unflavored Kombucha (store bought is fine)
4 bags black tea
1/2 cup white sugar
7 cups filtered water

Equipment:

2 Quart saucepan
Glass Jar
Cheesecloth or paper towel
Rubberband

HOW TO GROW YOUR OWN SCOBY:

Start by making your sweet tea. Bring water to a boil and remove from heat. Add in 1/2 cup white sugar and stir to dissolve. Add in your tea bags and steep for 10 minutes. Remove tea bags and allow the tea to cool completely.
Once tea has cooled, pour into your sterilized glass jar.

Cover with a paper towel and secure with rubber band.

Set jar aside in a dark, warm corner for 1-4 weeks, depending on the temperature in your house. The warmer it is, the quicker the SCOBY will grow. During the winter this can take as long as 4 weeks.
