I first tried this tomato feta greek salad at my sister in law’s baby shower (thank you Lily for introducing me to this salad!). It was one among dozens of other salads that her mom had made for the baby shower but this one caught my eye. It looked simple and yet so intriguingly different from the rest. You probably can’t tell just by looking at it, but this tomato feta greek salad packs a lot of flavor. All it takes is five simple ingredients and you can have this amazing salad anytime.
I love serving this to company or at parties because I always have the ingredients on hand, it’s so simple to toss together, and doesn’t wilt or go soggy. So even if there are leftovers, I can have it for lunch the next day. Most of all, what makes this salad so easy is that it doesn’t even need a dressing, just a little bit of avocado oil (or olive oil if you like the stronger flavor). The distinct flavors of feta cheese, garlic, and dill combine to make a really fresh, creamy, zesty, and tangy dressing for the tomatoes. Perfect way to use up all those garden fresh tomatoes that are in season right now!
Ingredients for Creamy and Tangy Tomato Feta Greek Salad:
2 cups grape tomatoes
6 ounces feta, crumbled
1/4 cup fresh dill, chopped
3 cloves garlic, pressed
2 tablespoons avocado oil
