The first thing I ever baked were oatmeal chocolate chip cookies. My mom had brought home a plate of cookies for me and my siblings with a recipe card in it that her friend had written out by hand. It was meant for my older sister who was 13 at the time. My sister, however, had no interest in even attempting them. So there I was, 10 years old and making my first batch of cookies. I had little help from my mom since she didn’t grow up on “American” cookies but European cakes, pastries and crepes. That she would have no problem whipping up or teaching me how to make. But how hard can it be, right? Just follow the directions on the card and you can have these amazing, delicious cookies. And so I did. And I was so impressed with myself. I made cookies all by myself and everyone ate them ooohhhing and aaaahhhhing. That is where my passion for baking first began. I couldn’t believe that I could create something so incredible by myself anytime I wanted, it was like magic. That is where I started, and I think for that reason I will always have a soft place in my heart for oatmeal chocolate chip cookies. I’ve played around with the recipe a lot and adjusted the quantities to include lots of chocolate, because lets admit it, I wouldn’t have liked these as much if they weren’t packed with chocolate. I like to use a combo of chocolate chips and chunks and use a variety of milk, bittersweet, and semi-sweet chocolate. But you can use whatever chocolate you have on hand or happens to be your favorite. Soft and Chewy Oatmeal Chocolate Chip Cookies

Ingredients for Soft and Chewy Oatmeal Chocolate Chip Cookies:

2 sticks butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
3 cups old fashioned oats (rolled oats, not instant or quick)
1 1/5 cups all purpose flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
2 1/4 cups chocolate chips/chunks of choice (I use a combo of bittersweet, semi-sweet, and milk chocolate)
1 cup walnuts, chopped

Directions for Soft and Chewy Oatmeal Chocolate Chip Cookies:

Preheat oven to 350°
In a stand mixer (or with a handheld mixer) combine butter and sugars on medium speed until creamy.
Add eggs and vanilla and mix for an additional minute.
Add oats, flour, cinnamon, baking soda and salt. Mix on low until no streaks of flour remain.
Add chocolate chips/chunks and walnuts and mix on low until thoroughly mixed in, about 30 seconds.

Scoop cookie dough using a rounded tablespoon onto a parchment-lined cookie sheet.

Bake for 10-11 minutes for soft cookies and about 12-13 minutes for thoroughly cooked cookies. Cool on baking sheet for 5 minutes and then dig in and enjoy these oatmeal chocolate chip cookies with a cold glass of milk.
