3 Secrets To Crisp And Fluffy Waffles Every Time (w/ Waffle Maker Giveaway!!)

What if I told you that you don’t need to wait until the next time you go out for breakfast to have amazingly crisp and fluffy waffles? After playing around with this waffle recipe for a few years and tweaking it along the way, we have given up on ordering waffles when we go out because they are never as good as the ones we make at home. When going out for breakfast, you look to order something special that you don’t have all the time or can’t make at home. But when you can make waffles this good, it will be hard to be impressed at a restaurant! There are three simple secrets to make these delicious, crisp, light, and fluffy waffles every time:

  1. Whip your egg whites: Whipping the egg whites to medium-stiff peaks will incorporate a lot of air into your batter and will make the waffles fluffy instead of dense and heavy. It is an extra step but it is absolutely necessary so DON’T skip it!
  2. Use cornstarch: Cornstarch, in combination with flour, will give your waffles that crispy outer shell and will help prevent it from getting soggy under the steam of the waffle maker.
  3. Add yeast: Traditional Belgian waffles are made with yeast, and for good reason– it’s what makes them come out fluffy and airy! I also love the flavor and texture that the yeast adds to this waffle recipe.

Ingredients for Fluffy Belgian Waffles :

  • 3 cups warm milk
  • 2 eggs
  • 1/4 cup oil
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 3 1/4 cups all purpose flour
  • 3/4 cups cornstarch
  • 3 egg whites

Directions:

Sprinkle the yeast over the 1/3 cup of warm milk and set it aside for five minutes.
In a large bowl, whisk together eggs, oil, and 1/4 cup of warm milk.
Add sugar and a pinch of salt then whisk again.
Add in the yeast mixture and whisk.
In a separate bowl, combine flour and cornstarch, then intermittently add flour/cornstarch mixture and remaining milk in three batches (mixing after each addition).

In another bowl, whisk egg whites until medium-stiff peaks form (about 3 minutes in a stand mixer on high speed).

Fold them gently into the waffle batter, making sure not to deflate the whipped egg whites.

Cover the bowl with a towel and place it inside a warm oven (I like to preheat mine to 100° and turn it off) for an hour to rise.
Using 1/3 cup of batter per waffle, cook in a waffle maker until golden. (See how mine aren’t evenly cooked, this is where the flip waffle maker would have been ideal!)

Enjoy with butter and syrup or top with your favorite berries or other toppings as desired.

P.S. In the rare case that you happen to have leftover waffles, these can easily be frozen and enjoyed throughout the week as a quick breakfast. Just wrap them in plastic wrap, followed by foil. When ready to eat, remove foil and reheat in microwave for 30 seconds followed by the toaster to crisp it up.
