Pomegranate Goat Cheese Green Salad with Creamy Poppyseed Dressing

Let me start off by saying; I am not a big salad person…let alone green salad. There are some amazing salad artists out there who can effortlessly craft a beautiful salad just by simply “throwing things together”. But this was a foreign concept to me. Up until this point, I had to research recipes for salads, go grocery shopping to buy all the separate ingredients, and only then I would attempt to make something. I never realized how quick and easy salads can be, so I would just buy something pre-made or ask someone else to bring a salad to dinner.

Maybe I avoided getting creative with salads because I am a very structured person when it comes to trying new things. I need a list, directions, or a recipe to follow. The idea of just “winging it” really scared me. People say they don’t like baking because it’s an exact science and if you mess up one ingredient, it won’t come out right. And to them I’ll say, maybe, if that ingredient is baking soda and you completely forgot to put it in or dumped in a 1/4 cup instead of 1/4 tsp… but I’m always improvising with baking  because I’ve been baking all my life and know it like the back of my hand. Salads are where I get stumped. But the story redeems itself…

It was a beautiful, warm, sunny Sunday afternoon and it finally felt like spring was near after weeks of rain and clouds. The windows were open and the smell of fresh dirt lingered in the air. The sun was so beautiful that day and it inspired me to “throw together” a salad. I pulled out ingredients I had on hand and went to work. Pomegranates, pears, almonds, goat cheese, they all made the cut! And the result was glorious. I am so proud of this salad!! And I feel so much more confident after seeing what I can make when I get creative.

So why such a long introduction for a salad? If you still stuck with me to this part, I just want to say; if you struggle with salads or they’re afterthought, you are not alone. There is hope! Here is what I learned; you really can’t mess up a salad. Just break out of your shell and give it a try… start throwing things together and coming up with combinations that you like. I hope this inspires you to get out of your salad rut and try something a little more innovative than your usual go-to. Ingredients for Pomegranate Goat Cheese Green Salad

  • 4 cups spring mix
  • 1 pear, sliced
  • 1/2 pomegranate seeds
  • 1/4 small red onion, sliced
  • 1/2 avocado, sliced
  • 4 oz. cranberry chevre, (or plain goat cheese) 
  • 1/4 almonds, sliced

Creamy Poppyseed Dressing:

  • 1/4 cup mayonnaise
  • 1/4 avocado oil, (or any other light-mild tasting oil of choice)
  • 2 tablespoons maple syrup
  • 1 tablespoon white vinegar
  • 1 tablespoon poppyseedsgreen salad

Directions for Pomegranate Goat Cheese Green Salad

For the Dressing:
In a small mason jar, combine all dressing ingredients and shake vigorously to combine. Alternatively, you can whisk them together in a bowl.

For the Green Salad:
In a large salad bowl, layer your spring mix with pears, pomegranates, avocado, red onion, goat cheese, and almonds. When you’re ready to serve your salad, toss it with the Creamy Poppy Seed Dressing.

Feel free to customize this salad to your preferences. If you don’t like goat cheese, try feta cheese instead. Don’t have sliced almonds? Try adding walnuts. Have some cranberries? Throw those in as well! But definitely pair it with the poppyseed dressing. It is TO DIE FOR! Trust me.

Serve this as a side for Bourbon Glazed Salmon, Honey Baked Ham, or this succulent, juicy duck.

Pomegranate Pear Green Salad with Creamy Poppy Seed Dressing

Ingredients

    Salad
  • 4 cups Spring mix
  • 1 pear, sliced

  • 1/2 avocado, sliced
  • 1/4 small red onion, sliced
  • 4 oz. Cranberry Chèvre (or plain goat cheese)
  • 1/4 cup almonds, sliced

  • 2 tablespoons maple syrup
  • 1 tablespoons white vinegar
