Breakfast Pizza With Easy 15 Minute Dough Recipe

I’m always looking for creative ways to “up” my breakfast game. I hate being stuck in a breakfast rut and cooking the same eggs and bacon every morning. I especially like to make a special breakfast on the weekends when the whole family can be together and enjoy something a little nicer than a cold bowl of cereal. I know pizza can sound somewhat intimidating for those that haven’t attempted it before, but it’s actually really easy to make and only takes 20 minutes. No need to mix the dough the night before and let it rise overnight. (This was always a problem for me because I kept forgetting about mixing it the night before and was always left comprising in the mornings for something else.) That’s why I love this Breakfast Pizza recipe; I make it the same morning, and while I am slicing and chopping the veggies, the dough is resting. So easy.

This breakfast pizza is great when you have veggies or toppings that you need to use up. You can make it with whatever veggies you like, or have on hand, but this just happens to be my favorite combination for a breakfast pizza. Serve it up on the weekdays, weekends, special occasions, when you have people over (like we do on our annual NYE getaways), or when you are just craving something delicious for breakfast and need to break out of your rut.Breakfast Pizza

For the dough:

1 3/4 teaspoons active dry yeast
3/4 teaspoons sugar
1 cup warm water
2 cups flour
1 1/4 teaspoons olive oil
3/4 teaspoons salt

(You can also use store-bought pizza dough if you want to make it even easier!)

Toppings:

2 cups mozzarella cheese (or cheese of choice) shredded
2 cups mushrooms, sliced
6 slices bacon
6 eggs
1/2 cup green onions, choppedBreakfast Pizza

Directions:

Combine water, yeast and sugar in bowl and set aside for 10 minutes until it starts to bubble up a little bit and look creamy. Breakfast Pizza
Add in flour, oil and salt and mix until it comes together. You don’t have to worry about it being a perfect ball at this point, set it aside for 5 minutes. Breakfast Pizza
Turn dough out unto a lightly floured surface and roll it out to approximately 16″x11″ (or whatever size your baking sheet is) Breakfast Pizza
Transfer to baking sheet and spread shredded cheese evenly. Top with sliced mushrooms, bacon and then the eggs. Sprinkle salt and pepper on top of eggs and top the pizza off with chopped green onions. (I’ve also added peppers, spinach and breakfast sausage to the pizza before which has come out great!) Breakfast Pizza
Bake at 400 for approximately 13-15 minutes until your eggs whites have cooked and your crust is golden. I like to take my pizza out before my yolks have cooked all the way through because I love a runny yolk, but you can cook it to your preference. Enjoy!!

      Thank you April! My whole family loves it as well (which is hard when you have a 7 year old and a 2 year old) but we can all agree on this one!
