Crowd-Pleasing Jalapeño Poppers

These jalapeño poppers are a crowd-pleaser; people will be begging you to share the recipe after just a couple bites.  No one can resist that crispy bacon and creamy filling, so expect these to be the first to go at any party. But I’ll let you in on a secret…they are so easy to make I hardly even consider this a “recipe”. 

I recently made these jalapeño poppers for our Friendsgiving party. Our hostess set them out for people to snack on as they mingled. She made the mistake of turning her back and continuing to work on something before returning to grab one for herself. When she turned around five minutes later, the peppers were nowhere to be found! For a minute she thought that she had forgotten to set them out, and as she was frantically looking around for the the jalapeño poppers, she spotted the empty serving dish in the sink with nothing left but a few bacon crumbs.

I especially love these because they are so simple to make and can be prepped days in advance. So convenient to not have to slave away in the kitchen on the day of your event; just bake and serve!

And for those that don’t eat spicy foods, I too was a bit scared when I heard “jalapeño” the first time I was introduced to these at a holiday work party many years ago. Given the reputation of the jalapeño, I imagined my mouth would be on fire after eating one of these. But the crispy bacon on top and the cream cheese inside enticed me enough to try it. I am so glad that I did! These are not spicy at all! And this is coming from a person that doesn’t eat anything hot at all. The saltiness and fat of the bacon as well as the cool creaminess of the cheese helped take away any heat that is left in the jalapeño after removing the ribs and seeds. There was just enough kick to make me want another one, but my mouth was most certainly not on fire. I later learned that most of the heat is in the seeds and ribs of the pepper, so if you carefully remove these, there shouldn’t be any heat left.  Just make sure you wear gloves while cleaning these or be careful not to touch the seeds and ribs with your bare hands. I learned the hard way.

Ingredients:

  • 14 jalapeno peppers
  • 1 (8 oz) pack cream cheese
  • 14 slices of bacon, cut in half

Jalapeno PoppersWash and dry the peppers. Chop the tops off and slice them vertically in half. Cut and scoop all seeds and ribs (white fleshy part) out. This is what makes the peppers spicy, so make sure you get them all cleaned out for a mild flavor.Jalapeno PoppersWith a teaspoon, fill the peppers with cream cheese.
Jalapeno PoppersSlice the bacon in half and wrap the peppers with a 1/2 slice of bacon. Try to position the bacon so the ends are under the peppers. Jalapeno Poppers

Line a baking sheet with parchment (or a silicone mat!) and arrange peppers so they are not overlapping each other.
Bake at 425° for 12-15 minutes or until bacon is at desired crispiness.
Grab one or two for yourself before serving them!!

    So glad you mentioned the gloves. I made the mistake of cleaning the jalapeños with bare hands before too, and later tried to put my contacts on! These are great though, the men of our family always request them for parties.
