Caramelized Onion and Feta Tart

December 4, 2015

I first tried this variation of caramelized onion and feta tart from the freezer section at Trader Joe’s. They sell these in bite size appetizer form but I think I prefer these in a tart more, probably because the serving size is bigger! These can be pretty addicting, so beware! I gave you a fair warning.

I love the perfect combination of sweet and tart. You get a little bit of sweetness from the onions, a little bit of tang and creaminess from the feta, and the puff pastry is just the perfect amount of crust. This is an ideal appetizer that can also be prepped ahead of time and then baked in the oven as your guests are arriving. It’s on of our favorite appetizers at book club. Here is what you’ll need:

Ingredients For Caramelized Onion And Feta Tart:

  • 1 Onion
  • 2 tblsp. butter
  • 1 tblsp. olive oil
  • 2 tblsp. brown sugar
  • 2 eggs
  • 3/4 cup sour cream
  • 1/2 stick butter, melted
  • 6 oz. crumbled feta
  • 1 puff pastry sheet

Directions For Caramelized Onion And Feta Tart:

Preheat oven to 400°.

Cut the onion in half and then slice thinly. caramelized onion and feta tart

Melt the butter and oil in a skillet over medium-high heat.caramelized onion and feta tart

Sautée the onions  until they start to caramelize and turn golden brown (about 10 minutes).caramelized onion and feta tart

Add in the 2 tablespoons of brown sugar at this point and let the onions cook for about another minute or so then set aside.caramelized onion and feta tart

While the onions are cooling, prepare your filling mixture. Add the feta cheese, sour cream, eggs, and melted butter to a mixing bowl and mix with a fork until combined. Season with salt and pepper.caramelized onion and feta tart

Roll out the puff pastry to fit your baking sheet. Mine was 9in x 13in and the crust turned out to be the perfect thickness. You don’t want to roll it out too thin because then it won’t hold your topping well. caramelized onion and feta tart

Top the pastry sheet with the feta mixture and then spread the caramelized onions on top. All ready for the oven! caramelized onion and feta tart

Bake at 400° for 20 minutes until the crust is cooked through and flaky on the edges.caramelized onion and feta tart

Serve this caramelized onion and feta tart as a savory appetizer for your next gathering. It’s best while still warm, but don’t worry, it will be eaten up before it has time to cool completely! Enjoy!

XOXO,

Irina
